Natural wine. Sans soufre. Biodynamic vines. Complex, mineral energy. Just 13.5%. Made gently by whole bunch, semi carbonic maceration in concrete. By former caviste of Gauby.
Tasting Notes:
This wine offers quite delicate aromas of black cherry, fig, marzipan, liquorice, morello cherry, polished leather, and a pronounced mineral note. On the palate, it's intense yet airy and silky with ripe and very fine tannins and the refreshing acidity typical of Padié wines.
Vintage Notes:
2010 started with a long, cold and wet winter, good for cleaning the vines and replenishing the water table. A warm spring was followed by a windy summer with average temperatures which slowed development and reduced risk of disease. A period of heat in late summer accelerated ripening and richness of flavour development while September turned cool again to allow a fresh harvest. The result: wines with great balance, ripeness of acids and tannins and intense fruit.

From several small parcels of 30 to 45 year old vines. Carignan on limestone, Syrah on schist, Mourvèdre on schist, and Grenache on limestone. The vineyards are worked organically and biodynamically by hand, using a donkey. The climate is Mediterranean, dry and hot but it's cooled by breezes from the sea a few kilometres away and from the Tramontane northerly wind.
Made naturally and without any sulphur or other additives, by an old-fashioned carbonic maceration process. Whole bunches were put in a closed concrete tank for 10 days to start the fermentation, intra-cellular. Then the wine was run off, skins and bunches pressed very slowly, and the wine fermented for 1 month in concrete tank. The wine was matured 12 months in concrete tank then 6 months in fibreglass. The wine was bottled unfined, and lightly filtered.
