If you want old school finesse and terroir purity, this is the wine! It stands apart from the crowd having never veered away from traditional methods. It comes from some of the oldest vines of the Appellation organically farmed on a mosaic of different soils. This, along with whole bunch fermentation and long ageing in old foudres, are the key to the natural freshness, beauty and complexity of this wine. Will age gracefully for 30 years or more.
Tasting Notes:
This striking wine transports you to the lavender and olive fields of Provence. There are beguiling aromas of black cherry, raspberry, strawberry, smokey, grilled thyme and rosemary, some honey, lavender, violets, some black olive. On the palate there's superb energy and silky, airy texture, despite the density and intensity of fruit. Low acid yet with thrilling freshness, this is made to last. Complex and persistent, it's a fantastic wine and yet another great success from this very unique estate.
Vintage Notes:
Very, very good! 2012 winter was freezing, cleaning up the vines (but also killing many old vines), spring was wet and cool, helping the water table, and the summer was largely hot and dry, conditions which have made for a very good vintage. Yields were low, but the quality high, with aromatic and complex fruit, good freshness, despite low acid levels at harvest, and ripe tannins.

From more than 25 different parcels over 18 hectares of vines in almost all sectors of the appellation, on different soils: sandy near Rayas, which give finesse; galets roulés on clay subsoils in La Crau and near Cabrieres, which give power; and stony gravels near la Gardine which give power and aroma. The vines are 45 to 100 years old. All grapes of the Appellation, though not listed, are used, mostly field blended. Grapes are hand harvested in mid-September.
Absolutely traditional: non-destemmed, which gives this wine its terrific texture and impact, varieties co-fermented together according to the progress of the harvest in concrete tank with temperatures rising to around 33ºC. Minimal extraction by short daily pumping over; a total 25 day cuvaison; pressed in an old basket press. The wine is matured 22 months in old 40 hl foudres. The wine is bottled unfiltered and unfined.
