Carol Valles Cava Parellada i Faura
This is a really lovely old school Cava. Made now from organic grapes and aged for 18 months before disgorgement, it’s made from the classic blend of Parellada, Macabeu and Xarello, very simply and with no residual sugar. It’s bone dry, soft and super-drinkable. It may even come as a surprise if you’re used to commercial Cava to taste this bone dry, yet fruity version.
Félines Jourdan Picpoul de Pinet 2015
Picpoul is a kind of Muscadet of the South, with its ripe lemon and apple aromatics and is a perfect accompaniment with seafood, especially oysters. The wine has rightly grown its reputation with the leadership of Felines-Jourdan over the last 10 years. Claude Jourdan’s Picpoul benefits from slightly later harvesting than most and enjoys that perfect combination of ripeness and freshness that comes from her well sited vineyards near the Bassin of Thau, near the oyster capital of Bouzigues, just south of Sete.
La Salada Vi de Taula Tinc Set Ansestral 2015
Tinc Set is a naturally made Ancestral, a lively but soft and gentle sparkling wine made from one fermentation only, without any additions, no sulfites, and from organic grapes. Using the same grapes as Cava and issuing from the same soils, it has similar dry, herbal, lemony, peach aromatics but has an energy and easy drinkability that you won’t find in commercial Cava. It’s so good that it seems to have become the House sparkling at the massively popular Bar Brutal in Barcelona.
